This extremely sweet (30 times sweeter than sugar) noncaloric herb, native to Paraguay, has been used as a sweetenerand flavor enhancer for centuries. Start seeds indoors and plant tender seedlings after all danger of frost and soil temperatures are well into the 50s. Stevia plants do best in a rich, loamy soil that drains very well. Come late summer, start harvesting leaves. On a moderately warm day, your crop can be quickly dried in the full sun in about 12 hours, using a screen for good air circulation. Crushing the dried leaves is the final step in releasing stevia's sweetening power. This can be done either by hand or, for greater effect, in an herb or coffee grinder.
